When you have a craving for something sweet, these energy bites are the perfect solution. They satisfy that cookies and cream craving while giving you a little boost of energy to get through the afternoon slump.

My family loves these because they taste indulgent but are made with simple ingredients. Pro tip, chill these in the freezer for about ten minutes before you roll them into balls so the dough is easier to handle.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed chocolate sandwich cookies
  • 1 tablespoon chia seeds

Instructions

  1. 1

Add the oats, almond butter, honey, and vanilla extract to a large mixing bowl.

  2. 2

Stir the ingredients together until they are well combined.

  3. 3

Gently fold in the crushed chocolate sandwich cookies and the chia seeds until they are evenly distributed.

  4. 4

Place the bowl in the refrigerator for twenty minutes to let the mixture firm up.

  5. 5

Scoop out small portions of the dough and roll them into balls with your hands.

  6. 6

Serve immediately or store in the fridge for later.

๐Ÿ’ก Tips

Store these in an airtight container in the refrigerator for up to one week. You can also keep them in the freezer for up to three months if you want to have a treat ready whenever you need one.
