These bars are a favorite in my house because they come together in minutes without ever turning on the oven. They satisfy that sweet tooth while giving you a nice hit of protein to keep you going throughout the day.

I love using a grain free cereal to keep these light and crunchy. You can easily swap the sweetener or use a dairy free chocolate to make sure these work for everyone in your family, no matter their dietary needs.

Ingredients

  • 2 cups grain free protein cereal
  • 1/2 cup creamy natural peanut butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips

Instructions

    Line a small square baking dish with parchment paper so it is easy to lift the bars out later.

    In a large bowl, stir together the peanut butter, honey, vanilla, and salt until the mixture is smooth and combined.

    Gently fold in the cereal until every piece is well coated with the peanut butter mixture.

    Add the mini chocolate chips and stir once more, being careful not to crush the cereal.

    Press the mixture firmly into your prepared baking dish using a spatula or the back of a spoon to create an even layer.

    Place the dish in the refrigerator for at least one hour to let the bars set completely before slicing into squares.

Store these bars in an airtight container in the refrigerator for up to one week. If you prefer them to be less sticky, keep them chilled right up until the moment you serve them. They also freeze well for up to two months.
