Yogurt bark is one of my favorite things to keep in the freezer for when I need a quick pick me up. It is made by spreading Greek yogurt thin and topping it with fresh berries and whatever crunchy snacks you have in your pantry, which makes it super easy to customize.

My biggest tip is to use full fat Greek yogurt because it freezes into a much creamier texture than the low fat versions. You can also swap the raspberries for strawberries or blueberries depending on what is in season.

Ingredients

  • 2 cups plain or vanilla Greek yogurt
  • 1 cup fresh raspberries
  • 1/4 cup sliced almonds
  • 2 tablespoons honey or maple syrup
  • 1/4 cup dark chocolate chips

Instructions

    Line a large baking sheet with a piece of parchment paper to make sure the bark does not stick.

    In a small bowl, stir the honey into the yogurt until well combined.

    Pour the yogurt onto the center of the baking sheet and use a spatula to spread it out into an even layer, about a quarter inch thick.

    Scatter the fresh raspberries, sliced almonds, and chocolate chips across the top of the yogurt.

    Place the tray in the freezer for at least three hours or until the yogurt is completely firm.

    Once frozen, lift the parchment paper out of the tray and break the bark into irregular pieces with your hands.

    Serve immediately and return any leftovers to the freezer.

Store any leftovers in a sealed freezer bag for up to two weeks. If you want to change up the flavor, try adding shredded coconut or a sprinkle of granola for extra texture.
