If you love classic sugar cookies but find the process of rolling and cutting them to be too much work, you are going to love this recipe. These bars give you that same delicious, buttery flavor and soft texture without any of the extra effort. They are a massive crowd pleaser at birthday parties and holiday get togethers.

One of the best parts about these bars is that the dough does not need to chill in the fridge before you bake it. Just mix, spread, and bake. Make sure you wait until the bars are completely cool before you add the frosting so it stays nice and thick on top.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 and 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 and 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened for frosting
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Colorful sprinkles for topping

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a 9 by 13 inch baking pan with parchment paper.

  2. 2

In a large bowl, cream together the softened butter and granulated sugar until smooth.

  3. 3

Mix in the eggs, vanilla extract, and almond extract until well combined.

  4. 4

Add the flour, baking powder, and salt. Stir the mixture until everything is just combined, being careful not to overmix.

  5. 5

Press the dough evenly into your prepared baking pan.

  6. 6

Bake for 20 to 25 minutes or until the edges are lightly golden. Let the bars cool completely in the pan.

  7. 7

To make the frosting, beat the softened butter, powdered sugar, heavy cream, and vanilla together until fluffy.

  8. 8

Spread the frosting over the cooled bars and top with a generous amount of sprinkles before slicing.

๐Ÿ’ก Tips

Store these bars in an airtight container at room temperature for up to three days. You can also keep them in the fridge if you prefer a firmer frosting. These freeze very well if you leave them unfrosted, just thaw them and add the frosting right before you serve.
