Easy Frozen Peanut Butter Bars
These no bake peanut butter bars are a cool and creamy treat that everyone will love.
There is truly nothing better than the classic combination of chocolate and peanut butter. These bars are a favorite in my house because they are so simple to put together without ever needing to turn on the oven.
My best tip is to use a high quality peanut butter for the best flavor. If you want a little extra crunch, you can stir some chopped peanuts into the peanut butter layer before freezing.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup softened butter
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups semi sweet chocolate chips
- 2 tablespoons coconut oil

Line an 8x8 inch baking pan with parchment paper so it is easy to lift the bars out later.

In a large bowl, mix the peanut butter, softened butter, powdered sugar, and vanilla until the mixture is smooth and combined.

Press this peanut butter mixture evenly into the bottom of your prepared pan.

In a microwave safe bowl, combine the chocolate chips and coconut oil. Heat in thirty second intervals, stirring in between, until the chocolate is completely melted and glossy.

Pour the melted chocolate over the peanut butter layer and spread it out so it covers the top completely.

Place the pan in the freezer for about one hour or until the chocolate is set firm.

Lift the bars out using the parchment paper and cut them into squares with a warm knife.

Store these bars in an airtight container in the freezer for up to one month. They soften up quickly, so pull them out just a few minutes before you are ready to serve them.
