Easy Summer Peach Crisp
This sweet and juicy peach crisp is the perfect way to enjoy fresh summer fruit with a buttery oat topping.

My top tip is to choose peaches that are soft to the touch so they release plenty of sweet syrup while baking. If your peaches are slightly firm, just let them sit with the sugar for ten minutes before adding the topping.
Ingredients
- 6 cups sliced fresh peaches
- 1/3 cup granulated sugar
- 1 tablespoon all purpose flour
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup old fashioned rolled oats
- 1 cup all purpose flour
- 1 cup packed brown sugar
- 1/2 cup cold unsalted butter, cubed
- 1/2 teaspoon cinnamon

Preheat your oven to 375 degrees Fahrenheit and grease a baking dish.

In a large bowl, combine the sliced peaches with the granulated sugar, 1 tablespoon of flour, vanilla extract, and lemon juice. Toss everything gently until the peaches are well coated.

Pour the peach mixture into your prepared baking dish.

In a separate bowl, mix the oats, 1 cup of flour, brown sugar, and cinnamon. Add the cold butter and use your fingers or a pastry cutter to mix it until the topping looks like coarse crumbs.

Sprinkle the oat mixture evenly over the peaches.

Bake for 30 to 35 minutes until the topping is golden brown and the fruit filling is bubbling around the edges.

Serve this warm with a generous scoop of vanilla ice cream or a dollop of whipped cream. Store any leftovers in an airtight container in the fridge for up to three days and reheat them in the oven to keep the topping crisp.
