Fattoush is a favorite in my kitchen because it is so bright and satisfying. The combination of cool cucumbers, crisp lettuce, and the tangy zip of pomegranate molasses makes it a standout side dish for any dinner table.

I love keeping this recipe simple by using one bowl for easy cleanup. If you want to turn this into a main course, feel free to add some chickpeas or grilled chicken to keep you full for longer.

Ingredients

  • 2 pieces pita bread, torn into bite sized pieces
  • 1 head romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh mint leaves, torn
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon lemon juice
  • 1/4 cup pomegranate arils
  • Salt and pepper to taste

Instructions

    Toast the pita pieces in a dry skillet over medium heat until they turn golden brown and crunchy, then set them aside to cool.

    In a large mixing bowl, whisk together the olive oil, pomegranate molasses, lemon juice, salt, and pepper to create the dressing.

    Add the chopped romaine, tomatoes, cucumber, red onion, mint, and parsley to the bowl with the dressing.

    Toss everything together until the vegetables are well coated.
