This colorful corn salad is an absolute favorite at my house whenever the weather warms up. It is packed with crunchy vegetables and sweet corn, making it a great side dish for any backyard barbecue.

Since there is no mayo in the dressing, it stays fresh and safe to eat even on a sunny picnic day. If you have the time, try to use fresh corn cut right off the cob for the best flavor and texture.

Ingredients

  • 3 cups corn kernels, fresh or thawed frozen
  • 1 large cucumber, finely chopped
  • 1 red bell pepper, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon honey
  • Salt and black pepper to taste

    Prepare your corn kernels and place them into a large mixing bowl.
