This is the salad I bring to every gathering lately. It is so fresh and colorful, filled with fluffy quinoa, chickpeas, crunchy cucumbers, peppers, juicy tomatoes, and salty feta cheese.

The real secret is the lemon sumac dressing. It adds a bright, tangy, and earthy flavor that makes the whole dish pop. It is perfect for potlucks or just keeping in the fridge for easy lunches during the week.

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water or vegetable broth
  • 1 can chickpeas, rinsed and drained
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint, chopped
  • 1/3 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon sumac
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

    Rinse the quinoa under cold water, then combine it with the water or broth in a medium pot.

    Bring the liquid to a boil, then cover and reduce the heat to low for about 15 minutes or until the water is absorbed.

    Fluff the quinoa with a fork and let it cool down to room temperature.

    In a small jar or bowl, whisk together the olive oil, lemon juice, sumac, minced garlic, Dijon mustard, salt, and pepper.
