There is something so satisfying about the classic combination of juicy chicken, creamy mozzarella, and sweet balsamic glaze. This meal feels fancy enough for guests but is simple enough to whip up on a busy weeknight. Everyone in my family loves how the warm tomatoes melt into the cheese.

My best tip for this recipe is to keep an eye on your chicken while it grills. If you are using an indoor grill pan, make sure it is nice and hot before you add the chicken so you get those beautiful char marks.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 3 tablespoons balsamic glaze

Instructions

  1. 1

Preheat your outdoor grill or indoor grill pan to medium high heat.

  2. 2

Rub the chicken breasts with olive oil and season them generously with salt, pepper, and dried oregano.

  3. 3

Place the chicken on the grill and cook for about six minutes on each side until the internal temperature reaches 165 degrees Fahrenheit.

  4. 4

Top each chicken breast with tomato slices and fresh mozzarella during the last two minutes of cooking. Cover the grill or pan to help the cheese melt.

  5. 5

Remove the chicken from the heat and garnish with fresh basil leaves.

  6. 6

Drizzle the balsamic glaze over the top just before serving.

๐Ÿ’ก Tips

Serve this chicken alongside a simple green salad or some crusty bread to soak up the balsamic glaze. If you have leftovers, store the chicken in an airtight container in the fridge for up to three days. It is delicious cold in a wrap for lunch the next day.
