This salad is my favorite way to handle those hot summer nights when I want something fresh but filling. Since there is no lettuce involved, you do not have to worry about wilted greens, and it keeps perfectly in the fridge for a quick lunch the next day.

My top tip is to let your steak rest for at least five minutes before you chop it into bite sized pieces. This keeps all those delicious juices inside the meat rather than letting them run all over your cutting board.

Ingredients

  • 1 pound flank or sirloin steak
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 2 large cucumbers, diced
  • 1 pint cherry tomatoes, halved
  • 1 large avocado, cubed

Instructions

    Season the steak with salt, pepper, and one tablespoon of olive oil.

    Heat a grill pan or cast iron skillet over high heat and cook the steak for four to five minutes per side until it reaches your desired doneness.

    Remove the steak from the heat and let it rest on a cutting board for at least five minutes before chopping it into small cubes.

    In a small bowl, whisk together the chopped parsley, minced garlic, quarter cup of olive oil, red wine vinegar, and red pepper flakes to make the dressing.

    In a large bowl, combine the diced cucumbers, tomatoes, and avocado.

    Add the chopped steak to the bowl and drizzle the prepared chimichurri dressing over everything.

    Toss the salad gently to coat all the ingredients and serve immediately.

Store any leftovers in an airtight container in the refrigerator for up to two days. If you plan on keeping it longer, add the avocado right before serving so it stays fresh and green.
