Rice noodles are a pantry staple that I reach for constantly when I need a quick meal. They are naturally light and soak up delicious sauces beautifully, but it can be tricky to get the texture just right without them turning into a mushy clump.

My best tip is to keep a close eye on the clock while they soak. Since they cook so quickly, they can go from perfectly chewy to overcooked in just a few seconds. Once you get the hang of this simple method, you will be whipping up noodle bowls in no time.

Ingredients

  • 8 ounces dried rice noodles
  • 4 cups boiling water
  • 1 tablespoon neutral oil (optional, for tossing)

Instructions

  1. 1

Place your dried rice noodles into a large heatproof bowl.

  2. 2

Pour the boiling water over the noodles until they are completely submerged.

  3. 3

Let the noodles soak for 5 to 10 minutes depending on the thickness of the noodles and the directions on the package.

  4. 4

Test a noodle to see if it is tender but still has a slight chew to it.

  5. 5

Drain the noodles in a colander and rinse them under cool water to stop the cooking process.

  6. 6

Toss the noodles with a little oil if you are not using them right away to prevent them from sticking together.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. When you are ready to eat again, just toss them into a hot pan with a splash of water or soy sauce to warm them through. If the noodles stick together after cooling, a quick rinse under warm water will loosen them right up.
