There is something so satisfying about a big bowl of chopped salad. Every bite is perfect because you get a little bit of everything, from the salty salami to the fresh crunch of the vegetables. It is my favorite meal to throw together when I want something healthy but filling.

My top tip is to make sure you chop your ingredients into bite sized pieces. It really makes a difference in how all the flavors come together. You can even prep the veggies earlier in the day and just toss it with the dressing right before you are ready to eat.

Ingredients

  • 2 hearts of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1/2 cup salami, chopped
  • 1/2 cup mozzarella pearls
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    In a small bowl or jar, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper until well combined.

    In a large salad bowl, combine the chopped romaine, tomatoes, cucumber, red onion, salami, mozzarella, and Parmesan cheese.

    Pour the dressing over the salad just before serving.

    Toss everything together gently until the ingredients are evenly coated with the dressing and serve immediately.

Store the salad and dressing in separate containers if you are prepping ahead of time so the greens stay crisp. This salad keeps well in the fridge for a day or two without the dressing. Serve it alongside warm crusty bread for a complete meal.
