Creamy Cauliflower Potato Salad
A lighter, lower carb version of a classic picnic side dish that everyone will love.

By swapping some or all of the potatoes for cauliflower, you get a lovely texture that holds onto the creamy dressing perfectly. It is always a hit at backyard barbecues.
My best tip for this recipe is to steam the cauliflower florets until they are just tender, not mushy. If you cook them too long, they tend to break apart once you mix in the mayo and other ingredients. Let them cool completely before adding the dressing for the best result.
Ingredients
- 1 large head of cauliflower, cut into bite sized florets
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 2 hard boiled eggs, chopped
- 1/4 cup red onion, finely diced
- 2 stalks celery, sliced thin
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- A pinch of paprika for garnish

Bring a large pot of water to a boil and steam the cauliflower florets for about 5 to 7 minutes until tender but still firm.

Drain the cauliflower well and spread it out on a baking sheet to cool down completely.

In a large bowl, whisk together the mayonnaise, mustard, vinegar, salt, and pepper.

Add the cooled cauliflower, chopped eggs, red onion, and celery to the bowl.

Gently toss everything together until the cauliflower is evenly coated in the dressing.

Sprinkle with fresh parsley and a dash of paprika before serving.

Cover and refrigerate for at least one hour to allow the flavors to blend together.

Store this salad in an airtight container in the refrigerator for up to three days. It tastes even better the next day after the flavors have had time to settle. Feel free to add some crispy bacon bits on top if you want a little extra crunch.
