Crispy Homemade Graham Crackers

- 7 tablespoons unsalted butter, chilled and cubed
- 1/3 cup honey
- 5 tablespoons milk
- 2 teaspoons vanilla extract

In a large bowl, whisk together both types of flour, the brown sugar, baking soda, salt, and cinnamon.

Add the cold butter cubes and use a pastry cutter or your fingers to work the mixture until it looks like coarse crumbs.

In a separate small bowl, whisk together the honey, milk, and vanilla extract.

Pour the liquid mixture into the dry ingredients and stir until a dough starts to form.

Turn the dough out onto a piece of parchment paper and roll it into a large rectangle about 1/8 inch thick.

Use a knife or a pizza cutter to score the dough into squares and prick each one with a fork to give them that classic look.

Bake at 350 degrees Fahrenheit for about 15 to 20 minutes until the edges are golden brown.

Store these crackers in an airtight container at room temperature for up to one week. If they lose their crispness, you can pop them in a 300 degree oven for five minutes to freshen them up. They also freeze very well for up to two months if you want to save them for later.
