Everyone loves the nostalgic taste of toasted marshmallows and chocolate sandwiched between graham crackers. These little balls capture those flavors perfectly in a healthy snack that you can enjoy anytime you need a quick energy boost.

I love making these for a busy week because they store beautifully in the fridge. My best tip is to use a small cookie scoop to get them all the same size so they look just as good as they taste.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup crushed graham crackers
  • 1/3 cup creamy peanut butter
  • 3 tablespoons honey
  • 1/4 cup mini chocolate chips
  • 1/4 cup mini marshmallows
  • 1 to 2 tablespoons water or milk if needed

Instructions

  1. 1

In a large mixing bowl, combine the rolled oats, protein powder, and crushed graham crackers.

  2. 2

Add the peanut butter and honey to the dry ingredients and stir until the mixture is well combined.

  3. 3

If the mixture feels too dry to hold together, add a tablespoon of water or milk at a time until it reaches a sticky consistency.

  4. 4

Fold in the mini chocolate chips and mini marshmallows until they are evenly distributed.

  5. 5

Use a cookie scoop or your hands to roll the mixture into small, bite sized balls.

  6. 6

Place the finished balls on a tray lined with parchment paper and refrigerate for at least 30 minutes before serving.

๐Ÿ’ก Tips

Store these in an airtight container in the refrigerator for up to one week. You can also freeze them for up to three months if you want to keep them on hand for longer. They are great for grabbing on your way out the door.
