If you are looking for a dessert that looks like it came from a fancy bakery but is actually quite simple to make, you have to try this phyllo crinkle cake. It is inspired by a Middle Eastern dessert called muakacha, and it has become a favorite in my kitchen because the texture is just wonderful. You get these lovely, crispy, golden layers on the outside that hide a creamy, custardy center.

One of the best things about this cake is that you really cannot mess it up. The whole point is for the dough to look wrinkled and rustic, so if a few sheets tear while you are folding them, just keep going. I love adding fresh berries for a pop of color, but you can easily swap those out for other fruits like sliced apples if that is what you have on hand.

Ingredients

  • 1 package phyllo dough, thawed
  • 1 cup unsalted butter, melted and cooled
  • 4 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries and raspberries

    Preheat your oven to 350 degrees F and lightly butter a 9 by 13 inch baking dish.

    Take two sheets of phyllo dough at a time and fold them accordion style. Place the folded sheets into your prepared baking dish until the pan is full.

    Brush the folded dough with the melted butter, ensuring it gets into the creases, and bake for 15 minutes until it starts to turn light golden.

    While the dough bakes, whisk together the eggs and sugar in a large bowl. Add the heavy cream, vanilla extract, lemon juice, and lemon zest, mixing until smooth.

    Remove the pan from the oven and pour the custard mixture evenly over the dough. Scatter the berries over the top.

    Bake for another 25 to 30 minutes, or until the top is beautifully golden brown and the custard is set.

    Let the cake rest for 5 minutes before slicing so the custard can firm up.

Store any leftovers in an airtight container in the refrigerator for up to three days. When you are ready to serve, a light dusting of confectioners sugar or a dollop of fresh whipped cream makes it extra special.
