This dessert brings back all those happy memories of running to the ice cream truck on a hot summer day. It features layers of crispy peanut bits, sweet caramel, and velvety ice cream that come together without ever needing to turn on your oven.

It is the perfect treat for birthday parties or a backyard barbecue. My best tip is to make sure your ice cream softens just enough to spread, but do not let it melt into a liquid before you assemble the layers.

Ingredients

  • 2 cups crushed waffle cone pieces
  • 1/2 cup melted butter
  • 1/2 cup chopped salted peanuts
  • 1/2 cup chocolate fudge sauce
  • 1/2 cup caramel sauce
  • 1 quart vanilla ice cream, softened
  • 1 cup whipped topping

Instructions

    Mix the crushed waffle cone pieces with the melted butter in a bowl.

    Press the crumb mixture into the bottom of a square baking dish to form a crust.

    Spread half of the softened vanilla ice cream evenly over the crust.

    Drizzle the chocolate fudge and half of the caramel sauce over the ice cream, then sprinkle with half of the chopped peanuts.

    Add the remaining ice cream on top and smooth it out with a spatula.

    Drizzle the rest of the caramel sauce and peanuts over the top.

    Freeze the dish for at least four hours until it is firm.

Store any leftovers in the freezer covered tightly with plastic wrap for up to one week. If the dessert is too hard to scoop right out of the freezer, let it sit on the counter for about five minutes to soften up slightly.
