There is nothing quite like a warm scone straight from the oven to start your day. These peach scones are incredibly tender and packed with juicy fruit that makes every bite taste like summer.

I recommend using firm, ripe peaches so they hold their shape well while you fold them into the dough. If you are short on time, you can even make the dough the night before and bake them fresh when you wake up.

Ingredients

  • 2 cups all purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup fresh peaches, peeled and diced
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar for the glaze
  • 1 tablespoon milk for the glaze

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. 3

Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it looks like coarse crumbs.

  4. 4

Gently fold in the diced peaches.

  5. 5

In a separate small bowl, whisk the cream, egg, and vanilla together.

  6. 6

Pour the liquid into the dry ingredients and stir until just combined, being careful not to overwork the dough.

  7. 7

Turn the dough onto a floured surface and pat it into a circle about one inch thick, then cut it into eight wedges.

  8. 8

Place the wedges on your prepared baking sheet and bake for 15 to 18 minutes until golden brown.

  9. 9

While the scones cool slightly, whisk the powdered sugar and milk together to create a smooth glaze, then drizzle it over the warm scones.

๐Ÿ’ก Tips

Store any leftovers in an airtight container at room temperature for up to two days. For the best flavor, warm them in the oven for a few minutes before serving. These also freeze well before baking if you want to save them for later.
