There is nothing quite like a homemade granola bar to get you through the afternoon slump. This recipe is a favorite in my house because it is so easy to pull together without even turning on the oven.

My top tip is to make sure you press the mixture firmly into your pan. Using the bottom of a flat measuring cup helps pack everything down so the bars hold together perfectly when you cut them.

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped cashews
  • 1/2 cup honey
  • 1/2 cup creamy peanut butter
  • 1/2 cup colorful chocolate candies
  • 1/2 cup mini chocolate chips
  • 1 pinch of salt

Instructions

    Line an 8 by 8 inch square baking dish with parchment paper so it is easy to remove the bars later.

    In a large bowl, mix the rolled oats and chopped cashews together.

    In a small saucepan over low heat, gently warm the honey and peanut butter until they are smooth and well combined. Stir in the pinch of salt.

    Pour the warm honey mixture over the oats and cashews, stirring until everything is evenly coated.

    Let the mixture cool for a few minutes so the chocolate does not melt instantly. Fold in the chocolate candies and mini chocolate chips.

    Transfer the mixture into your prepared pan. Use the bottom of a flat cup or a piece of parchment paper to press the granola down into a tight, even layer.

    Place the pan in the refrigerator for at least two hours to set before slicing into bars.

Store these bars in an airtight container in the refrigerator to keep them chewy and fresh. If you prefer them on the go, you can wrap them individually in plastic wrap for up to one week.
