There is something special about homemade pretzel bites fresh from the oven. They are soft on the inside with that signature golden crust that makes them so hard to put down once you start snacking.

My favorite thing about this recipe is how easy it is to customize. You can keep things classic with coarse salt or toss them in cinnamon sugar for a sweet treat. Just make sure to serve them warm.

Ingredients

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 packet active dry yeast
  • 4 1/2 cups all purpose flour
  • 2 ounces unsalted butter, melted
  • 1/2 cup baking soda
  • 4 cups water for the bath
  • Coarse salt for topping
  • 3 tablespoons melted butter for brushing

Instructions

    Combine the warm water, sugar, and salt in a bowl. Sprinkle the yeast on top and let it sit for about 5 minutes until it looks foamy.

    Add the flour and melted butter to the yeast mixture. Mix until a dough forms, then knead it on a floured surface for about 5 minutes until smooth.

    Place the dough in a greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until it has doubled in size.

    Preheat your oven to 450 degrees Fahrenheit and line a baking sheet with parchment paper.

    Divide the dough into 8 pieces and roll each one into a long rope. Use a knife to cut the ropes into bite sized pieces.

    Bring the 4 cups of water and the baking soda to a boil in a large pot.

    Drop the pretzel bites into the boiling water in small batches for about 30 seconds each, then remove them with a slotted spoon.

    Place the boiled bites onto your baking sheet, sprinkle with coarse salt, and bake for 10 to 12 minutes until they are a deep golden brown.

    Brush the hot pretzel bites with melted butter immediately after they come out of the oven.
