Making the perfect hard boiled egg is a skill every home cook should have in their back pocket. By using this gentle method of heating the water and then letting the eggs rest off the heat, you avoid those tough, rubbery whites and green rings around the yolk.

I always recommend using eggs that have been in your fridge for about a week. Older eggs peel much cleaner than brand new ones from the store. Once you get the timing down, you will have a reliable snack or salad topper ready to go whenever you need it.

  • 12 large eggs
  • Water
  • Ice cubes

    Place the eggs in the bottom of a large pot and fill it with enough water to cover them by at least one inch.

    As soon as the water boils, turn off the heat completely and cover the pot with a lid.

    Let the eggs sit in the hot water for exactly 15 minutes for large eggs. Use 13 minutes for small eggs or 17 minutes for extra large eggs.

    While the eggs sit, prepare a large bowl filled with cold water and plenty of ice.

    When the timer goes off, use a slotted spoon to transfer the eggs into the ice water bath. Let them cool completely for about 15 minutes before peeling or storing.
