When your schedule gets busy, having a healthy snack waiting in the freezer is a total lifesaver. These no bake protein bars are incredibly easy to pull together in just a few minutes and are naturally vegan and gluten free. You can customize them based on what you have in your pantry, making them a great option for school or work lunches.

I recommend using an unflavored protein powder for this base recipe. If your powder is already sweetened, you might want to scale back the maple syrup a little bit. If the mixture feels a bit dry, just add a splash more non dairy milk until you reach a consistency similar to cookie dough.

Ingredients

  • 1 cup rolled oats, gluten free
  • 1/2 cup nut butter or sunflower seed butter
  • 1/3 cup liquid sweetener like maple syrup
  • 1/4 cup unsweetened protein powder
  • 2 tablespoons chia seeds
  • 1 pinch of salt
  • 1 to 2 tablespoons non dairy milk as needed

Instructions

  1. 1

In a large bowl, combine the oats, protein powder, chia seeds, and salt.

  2. 2

Add the nut butter and maple syrup to the dry mixture and stir well to combine.

  3. 3

If the mixture is too crumbly or dry, add a small splash of non dairy milk one tablespoon at a time until the dough holds together when pressed.

  4. 4

Line a small square baking dish with parchment paper.

  5. 5

Press the dough firmly into the dish using the back of a spoon or your hands to create an even layer.

  6. 6

Place the dish in the freezer for about 20 minutes to set before slicing into bars.

  7. 7

Store the finished bars in the freezer or fridge for an easy grab and go snack.

๐Ÿ’ก Tips

Keep these bars stored in an airtight container in the freezer for the best texture and freshness. If you want to make them nut free, simply swap the almond or peanut butter for sunflower seed butter.
