Roasted chickpeas are one of my favorite go to snacks because they are so easy to pull together from pantry staples. They get incredibly crunchy in the oven and take on whatever spices you have in your cupboard.

I love keeping these around for a quick afternoon treat or tossing them over a fresh green salad for a bit of extra texture. Just make sure to dry the beans well before roasting so they get perfectly crisp.

Ingredients

  • 1 can (15 ounces) chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Drain and rinse the chickpeas, then pat them completely dry with a clean kitchen towel or paper towels.

    In a mixing bowl, toss the dried chickpeas with the olive oil, garlic powder, dried oregano, salt, and pepper.

    Spread the seasoned chickpeas in a single layer on a baking sheet.

    Bake for 20 to 30 minutes, shaking the pan halfway through, until they are golden brown and crispy.

    Let them cool slightly before serving as they will continue to crisp up as they sit.

Store any leftovers in an airtight container at room temperature for up to two days. If they lose their crunch, you can pop them back in a warm oven for a few minutes to crisp them up again. They are best served fresh for the ultimate texture.
