This dressing has become a staple in my kitchen because it is so fresh and flavorful. The combination of tangy lemon, aromatic dill, and oregano creates a Mediterranean vibe that works perfectly on crisp greens or roasted vegetables.

It is incredibly quick to whip up in your food processor, and the tahini gives it a lovely creamy texture without needing any dairy. Keep a jar in your fridge for busy weeknights when you need to add a little something special to your dinner bowl.

Ingredients

  • 2 medium garlic cloves
  • 1/2 cup plus 1 tablespoon extra virgin olive oil
  • 3 to 4 tablespoons fresh lemon juice, to taste
  • 2 tablespoons packed fresh dill
  • 1 tablespoon red wine vinegar
  • 1 tablespoon runny tahini
  • 2 1/2 teaspoons dried oregano
  • 1 teaspoon pure maple syrup, or to taste
  • 1/4 to 1/2 teaspoon fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon water, if needed

Instructions

    Place the garlic cloves into a small food processor and pulse until they are minced.

    Add the olive oil, lemon juice, fresh dill, red wine vinegar, tahini, dried oregano, maple syrup, salt, and black pepper into the food processor.

    Process everything for about 15 seconds until the dressing is well combined.

    If you prefer a thinner consistency, add the teaspoon of water and process again briefly.

    Taste the dressing and adjust the salt or lemon juice if you think it needs a little more zing.

Store this dressing in an airtight container in the refrigerator for up to 5 days, or freeze it for up to 1 month. Give it a good stir before serving if the ingredients have separated. For an extra herby kick, try adding half a teaspoon of dried basil to the mix.
