This miso pasta is one of my favorite go to meals when I want something special but do not have a lot of time. The combination of butter, garlic, and savory miso creates a silky sauce that clings perfectly to every strand of pasta. It is amazing how much depth a few simple ingredients can provide.

Since this comes together in about 20 minutes, it is perfect for those busy weeknights when you still want a hearty dinner. I suggest keeping a container of miso in your fridge because it adds an instant punch of umami to so many different dishes.

Ingredients

  • 12 ounces bucatini
  • 6 ounces salted butter
  • 3 cloves garlic, minced
  • 1/4 cup miso paste
  • 3/4 cup grated Parmesan cheese
  • Furikake or nori flakes for garnish

Instructions

    Bring a large pot of water to a boil and cook the bucatini according to the package directions until it is al dente.

    Before draining, carefully reserve 1 cup of the starchy pasta water and set it aside.

    In a large skillet over medium heat, melt the butter and add the minced garlic, cooking for about 1 to 2 minutes until fragrant.

    Whisk the miso paste and the reserved pasta water into the skillet until the sauce is smooth and combined.

    Add the cooked pasta and the Parmesan cheese to the skillet, tossing everything together until the noodles are evenly coated in the creamy sauce.

    Serve immediately with a sprinkle of furikake or nori flakes if you like.
