There is something so special about the smell of fresh lemon baking in the oven. These muffins are a favorite in my house because they strike the perfect balance between sweet and tart, plus they have a lovely crunch from the poppy seeds.

For the best results, make sure your eggs and butter are at room temperature before you start. This helps the batter come together smoothly and ensures your muffins rise beautifully every single time.

Ingredients

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar for the glaze
  • 1 tablespoon fresh lemon juice for the glaze

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and line a muffin tin with paper liners.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.

  3. 3

In a separate bowl, stir together the melted butter, eggs, milk, lemon juice, and lemon zest.

  4. 4

Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.

  5. 5

Divide the batter evenly among the muffin cups.

  6. 6

Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

While the muffins cool, whisk the powdered sugar and lemon juice together until smooth.

  8. 8

Drizzle the glaze over the cooled muffins before serving.

๐Ÿ’ก Tips

Store these muffins in an airtight container at room temperature for up to three days. If you want to keep them longer, they freeze perfectly for up to two months. Simply thaw them on the counter whenever you need a quick breakfast treat.
