There is something truly special about the smell of brown butter in the kitchen. These cookies are a favorite in my house because they balance the hearty texture of rolled oats with the richness of browned butter and plenty of dark chocolate chips.

My secret for the best results is to make sure your butter cools down slightly before you add the eggs. This keeps the dough from getting too greasy and ensures the cookies bake up perfectly soft and chewy every single time.

Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old fashioned rolled oats
  • 2 cups semi sweet chocolate chips
  • Flaky sea salt for sprinkling

Instructions

  1. 1

Place the butter in a saucepan over medium heat and cook, stirring constantly, until it turns a golden brown color and smells nutty. Pour it into a large bowl and let it cool for about 10 minutes.

  2. 2

Whisk the brown sugar and granulated sugar into the browned butter.

  3. 3

Add the eggs and vanilla extract to the bowl and beat until the mixture is smooth.

  4. 4

In a separate bowl, whisk together the flour, baking soda, and salt.

  5. 5

Slowly mix the dry ingredients into the butter mixture, then fold in the oats and chocolate chips.

  6. 6

Cover the dough and refrigerate it for at least 30 minutes to let the flavors develop.

  7. 7

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  8. 8

Scoop rounded tablespoons of dough onto the baking sheet and bake for 10 to 12 minutes until the edges are golden.

  9. 9

Sprinkle the tops with a little flaky sea salt right after you pull them out of the oven.

๐Ÿ’ก Tips

Store these cookies in an airtight container at room temperature for up to five days. You can also freeze the raw dough scoops for up to three months and bake them straight from frozen whenever you need a quick treat.
