These stuffed peppers are my favorite way to turn a beloved party dip into a hearty weeknight dinner. By searing fresh chicken and mixing it with cream cheese, hot sauce, and plenty of cheddar, you get a filling that is creamy, spicy, and completely comforting. Using bell pepper halves makes the meal feel light while keeping the budget in check.

I love serving these when I want something special without spending hours in the kitchen. If you are in a rush, feel free to use rotisserie chicken instead of searing your own, just stir it into the sauce and you are ready to stuff the peppers. It is a quick trick that saves so much time on busy weeknights.

Ingredients

  • 1.5 pounds chicken breasts, cut into small cubes
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 3 large green bell peppers, halved lengthwise and seeded
  • 1 tablespoon butter
  • 1/2 cup hot sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 ounces cream cheese, cubed
  • 1.5 cups grated cheddar cheese, divided
  • 1/4 cup blue cheese crumbles
  • 2 green onions, sliced
  • Nonstick cooking spray

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease an 8 by 10 inch casserole dish.

    Pat the cubed chicken dry with paper towels, then season it with salt and pepper.

    Heat the oil in a large skillet over medium high heat and cook the chicken until it is golden brown and cooked through. Drain any excess liquid on paper towels.

    Reduce the skillet heat to medium. Add the butter, hot sauce, garlic powder, and onion powder to the pan.

    Stir in the cream cheese and half of the cheddar cheese until everything is melted and smooth. Fold the cooked chicken back into this sauce.

    Place the bell pepper halves into the prepared casserole dish and fill each one evenly with the buffalo chicken mixture.

    Top the peppers with the remaining cheddar cheese and the blue cheese crumbles.
