Caesar Slaw with Crispy Chicken
This fresh and crunchy salad combines the best parts of a creamy Caesar with the hearty bite of golden crispy chicken.

By using both green and purple cabbage, you get a wonderful crunch that stays crisp much longer than traditional lettuce, and it holds up perfectly if you have leftovers for the next day.
I love serving this with homemade crispy chicken tenders, but it is just as delicious with frozen tenders or even a vegetarian alternative if you are in a rush. It is a fantastic dish for families because you can keep the chicken on the side so everyone can build their bowl exactly how they like it.
Ingredients
- 1/4 head green cabbage, about 8.5 ounces
- 1/4 head purple cabbage, about 8.5 ounces
- 2 green onions, diced
- 1/2 cup Caesar dressing
- 1 ounce grated Parmesan cheese
- 1/2 cup croutons
- 1 pound chicken tenders
- 1/3 cup plain Greek yogurt
- 1/4 teaspoon salt
- 3 tablespoons water
- 1 3/4 cups panko breadcrumbs
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon freshly cracked black pepper
- 2 tablespoons neutral oil
Instructions

Preheat your oven to 400 degrees Fahrenheit.

In a small skillet, heat the neutral oil over medium heat. Add the panko breadcrumbs and toast them until they turn a light golden brown, then remove from the heat.

In a bowl, mix the toasted panko with the onion powder, garlic powder, 1/4 teaspoon salt, and pepper.

Whisk the Greek yogurt, 3 tablespoons of water, and 1/4 teaspoon of salt in a shallow dish. Dip each chicken tender into the yogurt mixture, let the excess drip off, then press the chicken firmly into the panko mixture to coat.

Place the breaded chicken on a parchment lined baking sheet and bake for about 20 to 25 minutes, or until the chicken is golden and cooked through.

While the chicken bakes, dice the green and purple cabbage into bite sized pieces and slice the green onions.

In a large bowl, toss the cabbage and green onions with the Caesar dressing and Parmesan cheese.

Top the slaw with the crispy chicken and croutons before serving.

Store the slaw and the chicken in separate containers in the fridge to keep the chicken from getting soggy. If you want a finer texture, feel free to use a mandoline or a sharp knife to shred the cabbage instead of dicing it.
