Potato stacks are a fantastic way to dress up simple potatoes for a special dinner. They look beautiful on the plate and have such a wonderful texture with crispy edges and a soft, cheesy center.

My best tip for success is to use a mandoline if you have one to get the slices thin and even. This ensures they cook through perfectly and stack up nicely in your muffin tin.

Ingredients

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1/2 cup butter, melted
  • 1 cup heavy cream
  • 1 cup shredded Gruyere or sharp cheddar cheese
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

    Preheat your oven to 400 degrees Fahrenheit and grease a standard muffin tin with butter or cooking spray.

    In a large bowl, whisk together the melted butter, heavy cream, minced garlic, thyme, salt, and pepper.

    Add the sliced potatoes to the bowl and toss them gently until every slice is well coated in the cream mixture.

    Layer the potato slices into each muffin cup, stacking them until the cups are nearly full.

    Sprinkle a little extra cheese on top of each stack if you like them extra indulgent.

    Bake for 35 to 40 minutes or until the potatoes are tender when pierced with a fork and the tops are golden brown.

    Let the stacks rest in the pan for about 5 minutes before carefully removing them with a spoon. Garnish with fresh parsley before serving.
