If you love a good Caesar salad, you are going to adore this version that uses pasta to make it a full meal. It is a fantastic option for potlucks or just a quick dinner when the weather is warm.

My best advice is to use a really good quality Parmesan cheese and fresh croutons. If you can, dress the salad right before serving so the lettuce stays nice and crisp.

Ingredients

  • 12 ounces rotini or farfalle pasta
  • 2 cups cooked chicken breast, shredded or cubed
  • 1 head romaine lettuce, chopped
  • 1 cup Caesar salad dressing
  • 1/2 cup grated Parmesan cheese
  • 1 cup seasoned croutons
  • 1/4 cup shaved Parmesan for topping
  • Salt and black pepper to taste

Instructions

    Cook the pasta in a large pot of salted boiling water according to the package directions.

    Drain the pasta and rinse it under cold water to stop the cooking process, then let it drain well.
