Chicken Caesar Smash Tacos

I really like this recipe because it is fast and keeps things interesting. Using the smash technique on the chicken helps it cook perfectly while creating a wonderful crust on the outside of the tortilla that stays nice and crunchy while you eat.
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt to taste
- 2 to 3 cups finely shredded romaine lettuce
- 1/2 cup sliced pepperoncini
- 1/4 cup freshly grated Parmesan cheese
- 1 pound ground chicken
- 1 tablespoon chicken seasoning
- 6 to 8 small flour tortillas
- Avocado oil for frying
Instructions

Whisk the mayonnaise, yogurt, Dijon, Worcestershire sauce, lemon juice, garlic, and a pinch of salt together in a bowl until smooth.

In a separate bowl, toss the shredded romaine, pepperoncini, Parmesan cheese, and about half of the Caesar sauce together. Whisk a tablespoon or two of water into the remaining sauce to make it thin enough for dipping.

Mix your chicken seasoning into the raw ground chicken.

Lay your tortillas flat and spread a thin layer of the seasoned chicken over each one, making sure to spread it all the way to the very edges.

Heat a thin layer of oil in a skillet over medium heat. Place the tortillas chicken side down into the hot pan and press them down firmly with a spatula for about 30 seconds.

Cook for 2 to 3 minutes until the chicken is browned and cooked through, then flip the taco to crisp the other side for another minute.

Remove the tacos from the pan and carefully fold them in half. If you are not serving immediately, keep them warm in a low oven.

Stuff each crispy shell with the prepared Caesar salad mixture and serve with the extra sauce on the side for dunking.

These are best enjoyed right after frying so the tortillas stay perfectly crisp. If you have leftovers, keep the salad and the crispy taco shells separate in the fridge to prevent them from getting soggy.
