There is something special about the way chipotle peppers add that perfect smoky kick to a good piece of beef. This recipe is a favorite in our house because it tastes like a weekend treat but is simple enough to put together on a busy weeknight.

To get the best results, try to let the meat marinate for at least an hour. This allows the spices to really soak into the steak so every bite is juicy and packed with flavor.

Ingredients

  • 1.5 pounds flank or skirt steak
  • 2 tablespoons chipotle peppers in adobo sauce, minced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1

In a medium bowl, whisk together the minced chipotle peppers, garlic, olive oil, lime juice, cumin, salt, and pepper to create a marinade.

  2. 2

Place the steak in a large resealable plastic bag or a shallow dish and pour the marinade over it, making sure the meat is evenly coated.

  3. 3

Seal the bag or cover the dish and refrigerate for at least one hour, or up to four hours for a deeper flavor.

  4. 4

Preheat your grill or a heavy skillet over medium high heat.

  5. 5

Remove the steak from the marinade and cook for about 5 to 7 minutes per side, or until it reaches your desired level of doneness.

  6. 6

Remove the steak from the heat and let it rest on a cutting board for 5 to 10 minutes before slicing it against the grain.

๐Ÿ’ก Tips

Serve this steak alongside cilantro lime rice and black beans for a complete meal. You can store leftovers in an airtight container in the fridge for up to three days. If you like extra heat, feel free to drizzle a little more adobo sauce over the finished slices before serving.
