Ingredients

  • 2 pounds Yukon gold potatoes, scrubbed and cut into 1 inch cubes
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup dill pickles, diced
  • 2 hard boiled eggs, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
