There is nothing better than the smell of fresh banana bread baking in the oven. This recipe is a favorite in my house because it turns those overripe bananas sitting on the counter into a delicious treat that everyone loves to eat for breakfast or with an afternoon cup of coffee.

For the best results, make sure your bananas are very spotted and soft. They provide the most natural sweetness and moisture for the bread. If you like extra texture, feel free to toast your pecans in a dry pan for a few minutes before adding them to the batter.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
