There is something so comforting about a plate of Chicken Marsala. It feels a bit fancy, but it is actually quite simple to put together on a busy weeknight. The combination of earthy mushrooms and the deep flavor of Marsala wine makes for a meal that feels truly special.

My biggest tip for this recipe is to make sure you use a dry Marsala wine rather than a sweet one. It makes all the difference in the balance of the sauce. If you have leftovers, this dish keeps beautifully in the fridge for a day or two.

Ingredients

  • 1.5 pounds chicken breast, sliced into thin cutlets
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 8 ounces sliced cremini mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup dry Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

    Mix the flour, salt, and pepper on a shallow plate.

    Dredge the chicken cutlets in the flour mixture and shake off any extra.

    Heat the olive oil and two tablespoons of butter in a large pan over medium high heat.
