Chicken Piccata is one of my favorite meals because it feels fancy but is actually so simple to make. The light breading on the chicken soaks up that zesty lemon and butter sauce perfectly, making every bite tender and flavorful.

I love serving this on busy weeknights when I want something comforting but light. If your chicken breasts are thick, be sure to pound them down a bit so they cook evenly and stay nice and juicy.

Ingredients

  • 2 boneless skinless chicken breasts, sliced into cutlets
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/3 cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

    Mix the flour, salt, and pepper on a large plate.

    Dredge each piece of chicken in the flour mixture until lightly coated, shaking off any excess.

    Heat the olive oil in a large skillet over medium heat.

    Add the chicken cutlets to the pan and cook for about 3 to 4 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.

    In the same skillet, pour in the chicken broth and lemon juice. Bring the liquid to a simmer while scraping up any browned bits from the bottom of the pan.

    Stir in the butter and capers, letting the sauce bubble for a minute until it thickens slightly.

    Place the chicken back into the skillet to coat it in the sauce.

    Serve warm, topped with fresh parsley.

Serve this dish over your favorite pasta or with a side of steamed asparagus. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat gently on the stove.
