This chiffon cake is a favorite in my kitchen because it is surprisingly simple to make despite its impressive appearance. It manages to stay incredibly soft and light while still having that rich flavor everyone loves.

My best tip for success is to make sure your egg whites are beaten to stiff, glossy peaks. This is what gives the cake its signature height, so take your time with this step and be gentle when folding the mixture together.

Ingredients

  • 2 1/4 cups cake flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 7 large egg yolks
  • 3/4 cup water
  • 2 teaspoons vanilla extract
  • 1 cup egg whites
  • 1/2 teaspoon cream of tartar

    Preheat your oven to 325 degrees Fahrenheit and have an ungreased tube pan ready.

    Whisk the flour, sugar, baking powder, and salt together in a large bowl.

    Create a well in the center and add the oil, egg yolks, water, and vanilla. Beat until the batter is smooth.

    In a separate clean bowl, beat the egg whites and cream of tartar until they hold stiff peaks.

    Gently fold the egg whites into your batter in three separate additions, being careful not to deflate the mixture.
