Classic Cowboy Cookies

I find that the secret to getting the best texture is to not overbake them. You want to pull them out of the oven when the edges look golden but the centers still look just a little bit soft. They will firm up perfectly as they cool on the pan.
Ingredients

- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups old fashioned rolled oats
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 cup semi sweet chocolate chips

Preheat your oven to 350 degrees F and line two large baking sheets with parchment paper.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

Add the eggs and vanilla extract to the butter mixture and beat until well combined.

In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Slowly stir the dry ingredients into the wet mixture until just combined, being careful not to overmix the dough.

Fold in the rolled oats, shredded coconut, chopped pecans, and chocolate chips by hand.

Scoop rounded tablespoons of dough onto your prepared baking sheets, leaving about two inches between them.

Bake for 10 to 12 minutes until the edges are golden brown.

Remove the cookies from the oven and let them cool on the baking sheet for five minutes before moving them to a wire rack to finish cooling.

Store these cookies in an airtight container at room temperature for up to five days to keep them soft. You can also freeze the raw dough scoops on a tray and then store them in a freezer bag for up to three months, just add an extra minute to the baking time when you are ready to bake them from frozen.
