There is something so satisfying about a big bowl of creamy pasta after a long day. This Chicken Alfredo is a family favorite because it uses simple pantry staples to create a rich and savory meal that feels special enough for company but is easy enough for a Tuesday night.

My secret to the best sauce is using freshly grated parmesan cheese instead of the pre shredded kind. It melts much smoother into the cream and butter, which makes all the difference in the final texture. Serve this while it is hot for the best experience.

Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound boneless skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 1/2 cups freshly grated parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

  3. 3

Season the chicken strips with salt and pepper, then add them to the skillet and cook until golden brown and cooked through.

  4. 4

Remove the chicken from the skillet and set it aside.

  5. 5

In the same skillet, melt the butter over medium heat and add the minced garlic, cooking for about one minute until fragrant.

  6. 6

Pour in the heavy cream and let it simmer gently for three minutes.

  7. 7

Whisk in the grated parmesan cheese until the sauce is smooth and thickened.

  8. 8

Add the cooked pasta and chicken back into the skillet, tossing everything together until the noodles are well coated in the creamy sauce.

  9. 9

Serve warm with a sprinkle of fresh parsley on top.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. When you reheat it, add a tiny splash of milk or water to the pan to loosen up the sauce as it can thicken quite a bit in the cold fridge.
