This chili is a favorite in our house because it is so simple to put together. You just brown the meat, toss everything into the slow cooker, and let the magic happen while you go about your day.

It has won plenty of local chili cook offs over the years. My best tip is to let the chili sit for a few minutes after turning off the slow cooker so the flavors have a chance to settle before you serve it.

Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 2 cans kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Place a large skillet over medium high heat and brown the ground beef with the diced onion until the meat is cooked through.

    Drain any excess grease from the skillet.

    Transfer the beef and onion mixture into your slow cooker.

    Add the kidney beans, black beans, diced tomatoes, tomato sauce, chili powder, cumin, garlic powder, salt, and pepper.

    Stir everything together until well combined.

    Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Taste and adjust seasonings if needed before serving.

Serve this with shredded cheddar cheese, sour cream, and fresh chopped onions on top. You can store any leftovers in an airtight container in the fridge for up to four days. It actually tastes even better the next day.
