Chicken Adobo is a staple in many Filipino households for good reason. The combination of soy sauce, vinegar, and plenty of garlic creates a sauce that tastes even better the next day.

My favorite thing about this recipe is how easy it is to put together. Just sear the chicken, simmer it in the sauce until tender, and serve it over a big bowl of steaming white rice.

Ingredients

  • 2 pounds chicken thighs, bone in and skin on
  • 1/2 cup soy sauce
  • 1/3 cup white vinegar
  • 1 head of garlic, peeled and smashed
  • 1 teaspoon whole black peppercorns
  • 3 dried bay leaves
  • 1 tablespoon vegetable oil
  • 1 cup water

Instructions

    Heat the oil in a large pan or skillet over medium high heat.

    Add the chicken thighs skin side down and cook until the skin is golden brown and crispy.

    Remove the chicken from the pan and set it aside.

    Add the smashed garlic to the same pan and cook for one minute until fragrant.

    Pour in the soy sauce, vinegar, water, peppercorns, and bay leaves.

    Place the chicken back into the pan and bring the liquid to a gentle boil.

    Turn the heat down to low, cover the pan, and simmer for about thirty minutes until the chicken is cooked through.

    Remove the lid and cook for another ten minutes to let the sauce thicken up slightly.

    Serve warm over fresh rice.

Store any leftovers in an airtight container in the fridge for up to three days. This dish tastes even better the next day because the flavors have more time to soak into the chicken. Serve with extra steamed rice to soak up all that delicious sauce.
