Classic French Lamb Navarin

Ingredients
- 1 kg lamb shoulder, cut into large 4cm chunks
- 2 tablespoons olive oil
- 2 tablespoons plain flour
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/2 cup white wine
- 3 cups chicken stock
- 3 sprigs fresh thyme
- 2 bay leaves
- 4 medium carrots, cut into chunks
- 300g baby potatoes, scrubbed
- 200g baby turnips, peeled and halved
- 1 cup pearl onions, peeled
- 1 cup frozen peas
- Salt and black pepper to taste

Season the lamb chunks generously with salt and pepper.

Heat the olive oil in a large pot or Dutch oven over medium high heat and brown the lamb in batches until well colored. Remove the lamb and set aside.

In the same pot, add the flour and tomato paste, stirring for a minute until fragrant.

Deglaze the pot with the white wine, scraping up any browned bits from the bottom, then stir in the garlic.

Return the lamb to the pot and pour in the chicken stock until the meat is covered.

Add the thyme and bay leaves, then bring to a boil before reducing the heat to low.
