Steak night is a favorite at our house, especially on the weekends. There is something so satisfying about a juicy piece of beef cooked just the way you like it.

My secret to a great steak is letting it come to room temperature before hitting the pan. A quick pat dry with a paper towel ensures you get that beautiful brown crust we all love.

Ingredients

  • 2 ribeye or sirloin steaks
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

    Take your steaks out of the fridge about thirty minutes before cooking so they reach room temperature.

    Pat the steaks very dry with paper towels and season both sides generously with salt and pepper.

    Heat the olive oil in a large cast iron skillet over medium high heat until it is shimmering.

    Carefully place the steaks in the pan and sear them for about four to five minutes without moving them to get a nice crust.

    Flip the steaks and add the butter, smashed garlic, rosemary, and thyme to the pan.

    As the butter melts and foams, tilt the pan slightly and use a large spoon to baste the steaks with the flavored butter for another three minutes.

    Check for your desired doneness using a meat thermometer and remove the steaks to a plate.

    Let the meat rest for at least ten minutes before slicing to keep it tender and juicy.
