Carmelitas are truly the ultimate treat for anyone who loves the combination of oats, caramel, and chocolate. They are chewy, sweet, and always a hit whenever I bring them to a party or gathering.

My best tip for these bars is to let them cool completely before cutting. If you try to slice them while the caramel is still piping hot, the bars will fall apart. Patience is definitely worth it for those perfect, clean squares.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 cup all purpose flour
  • 1 cup old fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi sweet chocolate chips
  • 1 cup caramel sauce
  • 3 tablespoons all purpose flour

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease an 8 by 8 inch baking pan.

    In a large bowl, mix together the melted butter, brown sugar, flour, oats, baking soda, and salt until well combined.

    Press about two thirds of the oat mixture into the bottom of your prepared pan to create the crust.

    Bake the crust for about 10 minutes, then remove it from the oven.

    While the crust bakes, stir the 3 tablespoons of flour into the caramel sauce to help it set properly.

    Sprinkle the chocolate chips over the warm crust, then pour the caramel mixture evenly over the chocolate layer.

    Crumble the remaining oat mixture over the top.

    Return the pan to the oven and bake for another 15 to 20 minutes until the edges are golden brown.

    Let the bars cool completely in the pan before cutting them into squares.

Store these bars in an airtight container at room temperature for up to three days. If you prefer a warm dessert, you can pop a square in the microwave for ten seconds and serve it with a scoop of vanilla ice cream.
