Classic Herb Crusted Roasted Rack of Lamb

There is something truly special about serving lamb for an Easter feast. My family looks forward to this recipe every single year because the herb crust adds so much flavor to the tender meat.

To get the best result, I recommend taking the meat out of the fridge about thirty minutes before you start cooking. This helps it reach room temperature so it cooks evenly in the oven.

Ingredients

  • 2 racks of lamb, frenched
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon fresh thyme, minced
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons Dijon mustard

    Preheat your oven to 400 degrees Fahrenheit.

    Pat the lamb dry with paper towels and season it generously with salt and pepper on all sides.

    Heat the olive oil in a large ovenproof skillet over medium high heat.

    Sear the lamb racks for about two minutes per side until they develop a nice golden brown crust, then remove from the heat.

    In a small bowl, mix together the garlic, parsley, rosemary, thyme, and breadcrumbs.

    Brush the meaty side of the lamb racks with the Dijon mustard.

    Press the herb and breadcrumb mixture onto the mustard coated surface of the lamb.

    Place the lamb racks back into the skillet or on a roasting pan and bake for 15 to 20 minutes until a thermometer reads 125 degrees Fahrenheit for medium rare.

    Let the meat rest for at least ten minutes before slicing between the bones to serve.
