This cobbler earned its fame by winning our local neighborhood cookoff. The secret is the balance between the tart lemon and the sweet, juicy blueberries that turn into a delicious syrup while baking.

It is the ultimate comfort food for a weekend afternoon. Make sure to use fresh berries if they are in season, but frozen ones work perfectly well if you let them thaw slightly before mixing.

Ingredients

  • 4 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup granulated sugar
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup boiling water

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a medium bowl, toss the blueberries with the lemon juice, lemon zest, and half a cup of sugar, then pour the mixture into a greased baking dish.

  3. 3

In a separate bowl, whisk together the flour, the remaining sugar, baking powder, and salt.

  4. 4

Use your fingers or a pastry cutter to work the cold butter into the dry ingredients until the mixture looks like coarse crumbs.

  5. 5

Sprinkle the crumb mixture evenly over the blueberries.

  6. 6

Carefully pour the boiling water over the top of the cobbler.

  7. 7

Bake for 40 to 45 minutes or until the top is golden brown and the fruit filling is bubbling.

  8. 8

Let it cool for about 10 minutes before serving so the sauce can thicken.

๐Ÿ’ก Tips

Serve this warm with a generous scoop of vanilla ice cream or a dollop of fresh whipped cream. If you have leftovers, keep them in the fridge and warm them up in the oven for a few minutes before eating.
