There is something so comforting about waking up to the smell of fresh pancakes on the stove. This recipe is a staple in my house because it uses simple pantry ingredients and results in the fluffiest stacks every single time.

My top tip for the best texture is to let your batter rest for about five minutes before you start cooking. This helps the flour absorb the moisture so your pancakes turn out light rather than dense.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 3 and 1/2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 and 1/4 cups buttermilk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. 1

Whisk together the flour, baking powder, sugar, and salt in a large mixing bowl.

  2. 2

Create a small well in the center of the dry ingredients and pour in the buttermilk, egg, and melted butter.

  3. 3

Mix the ingredients until they are just combined, being careful not to overwork the batter.

  4. 4

Heat a lightly oiled griddle or frying pan over medium high heat.

  5. 5

Pour or scoop the batter onto the pan using approximately 1/4 cup for each pancake.

  6. 6

Cook until bubbles form on the surface and the edges look dry, then flip and brown the other side until golden.

๐Ÿ’ก Tips

Serve these warm with a pat of butter and real maple syrup. If you have leftovers, store them in an airtight container in the fridge and reheat them in the toaster for a quick weekday snack.
