There is nothing quite like the smell of a cherry pie baking in the oven. It is a timeless dessert that brings back memories of family gatherings and summer days, and the contrast between the tart cherries and the sweet, flaky pastry is truly special.

My best tip for this recipe is to keep your pie dough as cold as possible before it goes into the oven. Chilling the dough helps the butter stay firm, which creates those beautiful, flaky layers we all love.

Ingredients

  • 2 prepared pie crusts
  • 5 cups pitted tart cherries
  • 1 cup granulated sugar
  • 4 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract
  • 1 tablespoon butter cut into small pieces
  • 1 egg beaten for egg wash
  • 1 tablespoon coarse sugar for sprinkling

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

In a large bowl, toss the pitted cherries with the sugar, cornstarch, lemon juice, and almond extract until everything is evenly coated.

  3. 3

Place one pie crust into a nine inch pie dish and pour the cherry mixture inside.

  4. 4

Dot the top of the fruit filling with the small pieces of butter.

  5. 5

Cover the pie with the second crust, trim the edges, and crimp them to seal the pie tight.

  6. 6

Cut a few slits in the top crust to allow steam to escape while it bakes.

  7. 7

Brush the top crust with the beaten egg and sprinkle with the coarse sugar.

  8. 8

Bake for 20 minutes, then reduce the oven temperature to 375 degrees Fahrenheit and bake for another 30 to 40 minutes until the crust is golden brown and the filling is bubbling.

  9. 9

Allow the pie to cool completely on a wire rack before serving so the filling can set properly.

๐Ÿ’ก Tips

Serve this warm with a generous scoop of vanilla ice cream. You can store any leftovers in the refrigerator for up to three days, or cover the pie tightly and keep it at room temperature for one day.
